Bison Ropa Vieja

Andrea is a local Andina Chef and is the owner of Four Directions Cuisine. She was born in Caracas, Venezuela although her Indigeneity is rooted in San Cristobal, Venezuela. She was adopted by an American couple when she was three years old. Down the road in her late twenties, she opened the first version of her catering business.

She uses her food to trace her own culture while educating the public about the expansive world of Indigenous food systems. The four main pillars of her business are sourcing locally, sourcing Indigenously, education and community work.

We will be serving a four-course meal with a starter, appetizer, main course and finishing with a dessert:

Warm-up: “Welcome Bite” Inka Trail Mix – toasted quinoa, popped amaranth, cacao nibs, pepitas and agave

Dandelion Tomato Salad – with shallots and a lemon champagne vinaigrette

Bison Ropa Vieja – with “butter” tepary beans from Ramona Farms and Red Lake Nation wild rice

Maca Custard – with blue corn cookie crumble

Every dish will be paired with one of our made-in-house hard seltzers. All of our seltzers are 100% natural, GMO free, Sugar free, Carb free and only 100 calories per 12oz serving!

Three 4oz Seltzers, one 12oz Seltzer and a cocktail will be included with the pairing.
